Ingredients

  • 2 pounds ground turkey or any protein of choice
  • 1 cup white onion diced
  • 2 cloves garlic minced
  • 1 green bell pepper chopped
  • 8 tomatillos diced
  • 4 cups gluten free broth chicken or vegetable
  • 1 tsp chili powder
  • 1 tsp cumin
  • salt and pepper to taste
  • 1 can Great Northern beans drained/rinsed

Instructions

  1. Place ground turkey (or protein of choice), 3 cups of broth, garlic, onion, beans, and bell pepper in a crock pot or slow cooker and turn on High heat.

  2. While slow cooker is cooking, remove husks from tomatillos and dice. Place in 1 cup of broth or water on stove top and bring to a boil.

  3. Simmer tomatillos until softened, and the color will change to a darker green, about 10 minutes.

  5. Break up meat in slow cooker into small chunks. Continue to stir throughout cook time.
