These dark chocolate no bake cookies are a healthy twist on an old favorite. Rebooted, this healthy, decadent, gluten free treat is packed with protein and has a secret super food, filled with Omega-3's. They are also vegan, dairy free, and very easy to make. You won't find any processed ingredients, butter, or refined sugar in this recipe!
In a heavy bottom pan, melt coconut oil
Add milk, cocoa, and sweetener, and bring to a boil over medium high heat, stirring constantly.
After boiling for 2 minutes, remove from heat
Add peanut butter and vanilla (optional).
Stir until melted.
Fold in oatmeal.
Drop a tablespoon sized dollop into parchment paper and flatten into cookie shape.
Put cookies in freezer for 30 minutes to set. Store covered in refrigerator. Enjoy!
